With a hint of the mountainside herbal flavours you find in Rhone wines. Elegance with some earthiness – my favourite combination.<br />

<p>The first asparagus of the season is always special and this year I had one of those experiences you read about in cook books. From ground to table in twenty minutes – thanks to Ed and Sandy Taylor who operate a roadside stand on Sandy Hook Road here in Prince Edward County. Ed picked a bunch for me right from his organic farm, and they were sizzling under the grill, into a frittata pan, and on the lunch table in next to no time. Along with a very good baguette from Metro and open bottle of<strong> Aussie Semillon</strong>. Brilliant sunshine made it all quite wonderful. Ed and Sandy have organic produce all season long and they’re just one minute south of one of the County’s best watering holes, The Waring House.</p>

<p><strong>Bottega,</strong> one of my favourite Prosecco producers, has sent the pink version in a gold covered bottle. Check this picture out. How festive! How can you resist?</p>
<p><strong>Go local with Chateau des Charmes</strong> who have been making great sparkling for longer than I care to remember.</p>
<p>It’s hard to distinguish between a good Loire region sparkling and a Champagne. Except in price. Start the evening with<strong> Chateau des Montgueret </strong>and the rest will be easy sailing.</p>
<p><strong>Mumm Napa</strong> is the perfect choice if you need an up-scale name. The wine is damn good too.</p>

<p>If you’re headed to Niagara this fall here’s two locations to put on your list.</p>
<p><strong><a href="http://www.billysbestbottles.com/blog/wp-content/uploads/2010/09/ravine1.jpg"><img class="alignleft size-full wp-image-2712" title="ravine" src="http://www.billysbestbottles.com/blog/wp-content/uploads/2010/09/ravine1.jpg" alt="ravine" width="400" height="231" /></a>Ravine Winery and Café/Food Shop</strong> for the quality of food and novel  rustic setting. It’s a bit like being at a cottage that had Jamie Kennedy cooking in the basement! Sit in the food shop or on the huge wrap-around porch with views of the pizza oven and vineyards. Take home some of the best bread in Ontario. You’ll find the winery next door in a handsome, tastefully restored Georgian house. A delightful contrast to the café. Excellent, French inspired reds. Ravine reminds me of the wonderful rustic-meets-upscale places you find in California. So great to have the experience closer to home. El Gastro serves up delicious gourmet tacos, tapas, southeast Asian dishes, salads and desserts which you can enjoy alongside Flat Rock wines in the picnic area. Gourmet food from a truck is all the rage in the US and is now in Niagara. (Wish El Gastro was in every city – including Prince Edward County!)</p>
<p>Flat Rock is one of the highest elevated wineries on the Beamsville Bench, with spectacular views of the vineyards and Lake Ontario. Yippee!! My five picks this week are out-and-out charmers. So warm and cuddly you may not want the winter to end.</p>
<p>I’m also recommending a pair of New World rich reds that are crafted with the northern Rhône Grape, the Syrah. From the Kosher feature there’s a lovely, mid-range, South African Chardonnay, and a superb Cava from Spain.</p>

Buy a champagne stopper – refrigerated, open sparkling wine keeps well for 4 to 5 days. The two great everyday sparkling wines are Prosecco from Italy and Cava from Spain.</p>

<p>Cava is the official term for sparkling wine from the Catalan region of Spain. They use the traditional Champagne method of second fermentation in the bottle so there’s a yeasty tang which adds to the refreshing experience. Cava is very everyday and affordable. And Segura Viudas is one of the best value wines in the world. Period. It should be the first thing in your shopping cart.<br />

<p>Wolf Blass is a master at creating wines with great drinkability and his bubbly has the just-right feeling for parties and celebrations. Refreshingly crisp with lovely delicate flavours. French styling with the Aussie sense of fun. Good stuff.<br />

The Loire Valley in France has been making sparkling Chenin for decades, and it’s always been <strong>one of my favourite alternatives to Champagne</strong>. Cave’s wine is very pure, light and delicate, and falls somewhere between Champagne and Prosecco styles. Super crisp aperitif or oyster wine.</p>
<p>Two things I really like about this wine are its superb quality and its truly local expression. France is the role model, but the delicacy and purity of expression are uniquely Niagara. Pour with pride.</p>
